Lesser Known/Often Forgotten Carbohydrate Sources

Perfect Health Diet (PHD) doesn't mention some starches in the safe starches list. Keeping with the spirit of the book, what do you all think of Rutabaga, Turnips, Parsnips, Name, Batata, and beets?

Plantain is high in starch.

Green plantains are higher in starch...I think yellow/black plantains, as they ripen, become higher in sugar. – JitzGrrl Jan 8 2012 at 15:50
OK, eat the greens! I have not found the imported plantains to ripen properly and get much sweeter. – The Loon Jan 9 2012 at 16:44

Not sure about name and batata, but the others aren't starchy. They're sugary.

Rutabaga is not a high starch food... I've used it in VLC dieting without upset. Turnips depending upon season are not high in sugars either.

Parsnips, on the other hand, are quite high in sugar.

Have we gone back to thinking that starch is anything but sugar?
