Hi guys, here's a bit of a fun one. What's your favorite paleo comfort food? Comfort foods generally tend to be, well, not paleo (e.g. chicken noodle soup, toast, crackers). Mine, once the weather cools down, is chicken vegetable soup.
I just made "breaded" and fried Chicken Fingers for dinner with some home made paleo bbq sauce(from sonofgrok.com) and some home made guacamole on the side. I took a little more than a # of chix breast and cut it into finger sized pieces then in 3 bowls, us some coconut flour mixed with a little cayanne peper an celtic sea salt (if you use it) one with like 3 eggs beat and one with shredded, unsweetened coconut. dredged in the flour then egg then coconut. Large pan with coconut oil, golden on eiher side and WHAMMO... Amazing!
Honestly, my new- and surprising to me- comfort food is... lamb stew. And big chunks of purple cabbage, dipped in some kind of salad dressing. And a raw carrot. Weird, because cupcakes and scones used to be my comfort food. Seriously.
My ultimate comfort food lately is an apple omelet with side of bacon. You fill the omelet with cream cheese or mascarpone and tart apples sauteed in butter and cinnamon. I pour melted butter with a touch of honey whisked in on top. It's only a little sweet if you use tart apples, and it's definitely a treat.
bacon!!! and really good salami with a glass of red wine. yum. last week i made a pot of gumbo the way my mom used to make it without the roux. so delicious, okra, shrimp, lingusia, and chicken wings. so good. roasted rack of lamb is pretty damn good too. i remember really not liking lamb as a kid, but now its definitely my favorite. the lamb has so much flavor it makes steak taste boring.
I noticed recently since its become winter (southern hemisphere) and my diet has been so good as of late, I noticed myself craving bad food more often and as a result cheating more often than I would like. So for this reason I decided that it is better to stock up on "paleo junk food" and eat that in abundance rather than cheat and eat bad takeaway food which is nearly always much worse than even the worst paleo food
So I have a fridge and pantry full of:
Bacon, Pork Ribs, and Good Quality
Sausages (I cook them up in the oven
in batches and leave it in the fridge
as a quickly grabbed snack--heating
Low-sugar/High-cocoa Dark Chocolate
Dark chocolate covered Macadamia nuts
Dried Fruit (apricots, blueberries, strawberries, etc)
Vintage Cheddar Cheese
This keeps me fully satisfied and much less tempted to eat bad food day to day. Throw in a gluten-free pizza every once in a while and I'm good to go!
