I peeled an HBE this morning and to my surprise the "white" was all grey! A dark grey at that. I looked at the yolk which was a beautiful creamy yellow, with no green edges.

I was kinda freaked out and discarded it.

Any idea why this would happen? or if it was safe to eat?

I have also found that sometimes there are brown flecks in the whites too. ?

I buy the organic eggs from Cosco.....for now. (Chickens this spring)

people generally agree it is from cooking too long.

"The egg yolk contains iron and the white (albumen) contains sulfur. During boiling the sulfur atoms are liberated and react with hydrogen ions in the white to form hydrogen sulfide (a gas). As gas forms, it diffuses in all directions and some reaches the surface of the yolk, where it encounters iron and reacts to form dark particles of ferrous sulfide.The egg yolk contains iron and the white (albumen) contains sulfur. I have had grey/green layer around they yolk before. But in this case the entire albumen was dark grey, all of the other eggs cooked at the same time were perfect. – Erik of Rockford Jan 10 2012 at 14:36
