I have seen chia smoothies around a number of paleo cooking pages, as well as other recipies that use chia as a 'gelling' agent to make pudding/jelly like deserts.

Is breaking (or blending) chia and letting them soak to a gel the best way of getting nutritents out of chia (or similar seed like flax). Does this remove indigestability issues and possible anti-nutrient issues?

Chia can be digested soaked or not soaked, it does not really matter if they are soaked or not, although nutritional benefits will increase slightly if soaked.
