I was making dinner today and I found myself wondering, what do other paleo people eat on a regular basis? How much effort do they put into it? Today for dinner, I made a fruit and coconut milk smoothie and I had some leftover venison in blueberry sauce from yesterday. But sometimes I just grab anything out of the fridge with no plan. Anyone care to share what they ate today?

Grass-fed burgers (~1.3 lbs) and greens. The greens were mache with fried onions, olive oil and lemon juice. The burgers were made with my favorite new technique: take a hunk of butter and wrap the ground beef around it. Then when you cook them the butter melts into the burger, giving it a richness throughout. A great way to add fat to your beef.

Wild sockeye salmon grilled on my mini Texas charcoal smoker; sauce was grass fed cream, lemon juice and dill; green beans blanched then fried in lard; tomato and cucumber salad.

Pork tenderloin, sauteed cabbage in olive oil, salad with mixed greens, tomatoes, sliced almonds, with a dressing of lemon juice and flax seed oil.

Good question, because I was out of inspiration this morning when I looked in the fridge! Last night I made a dish that was sort of curry, sort of laksa - organic beef stir-fry strips, with coconut cream, yellow curry paste (I buy one that's just the spices, no oil or fillers), and red pepper, mushroom, onion, bean sprouts. It was good. And it used up leftovers veggies.

I sometimes plan ahead, especially if I have a recipe idea that I want to try out or tweak Plus, there's defrosting of meat to be done, and that takes time since I don't believe in microwaving animal products.

Tonight I'm having chicken curry, but prepared in a different way to my standard method - this time, I've spice-rubbed and semi-slow roasted the chicken first, since it's whole, and now I've added the coconut cream and water, plus more spices. It's simmering happily away, filling the house with yummy curry aroma, while I wait for the beau to arrive home.

A beautiful way to end a long fast :)

I'm all about simple and almost never make 'recipes' since I'm only cooking for myself (I cook 3 separate Low Carb meals for my hubz and 5 kids). Also, I love the unadorned taste of meat.

So: 10 oz ribeye, big slice of turkey breast, plus a few walnuts.

Last night I ate salami slices spread with butter, slices of raw local cheddar on top.

Tonight I will eat a pound of grassfed ground beef, fried in coconut oil with a dash or two of homemade hot-pepper sauce on top, maybe a little mustard.

Some nights I mix cultured sour cream with nutmeg and cinnamon when I'm feeling a need for something "sweet."

Another dinner favorite that I have at least once a week is fajitas: beef, sometimes with pork, pieces fried up in coconut oil with a little garlic, then covered in chopped fresh jalapenos and mint. Sounds weird with the mint, but it's super yummy!

I generally eat a meat and fat diet, with veggies used as condiments. I have found if I eat more veggies than just a dash of this or that, I get wicked cravings. I also do not eat fruit at all, for me it is the road to hell as it gives me terrible carb cravings and I gain weight.

Since this is a thread on dinner, I would like to add that eating meat and fat in the evening makes me sleep like a baby.

It felt like autumn here -- cool and rainy -- so I spent Sunday afternoon making fall food: Cubes of beef chuck browned in ghee and braised in red wine and stock with aromatic veg (carrots, celery, onion, shallots, garlic) and herbs (two kinds of thyme and parsley), and roasted root vegetables (carrots and cubes of celery root tossed in a mix of pastured butter and herbed Kerrygold, sprinkled with smoked paprika, and roasted in a 400F oven for about 75 min). Mashed potatoes, too, with cream and the herbed Kerrygold, because my kids love 'em, though I only ate a few bites.

It felt very French, very connected to the land. My favorite kind of cooking. The whole house still smells good. Good stuff.

I am running low on my groceries in the fridge, so I had very simple combination of leftovers with something added, a common feature (I often cook a lot and freeze the leftovers). so I had three grass-fed beef sausages baked in oven with a few leftover meat balls (regular meat). Nothing special, but did the trick :)

I really need to do grocery shopping...

Tonight I found some frozen tilapia fillets, so I baked them. then I ate them. I am so boring, sorry :D

Last night i had one skin-on bone-in chicken breast slow roasted, with one pan fried grass-fed hot dog, and one leftover braised short rib. And a bowl of broth. Thats it. I've been going zero-plantmatter for a little over a month as a n=1 experiment. Going well.

Tonight it'll be a hard-seared hanger steak with more leftover short ribs and a bowl of broth.

If it sounds slightly spartan, its not. Totally delicious.

I usually have lighter dinners. Last night it was an egg, a cucumber, a bit of goat cheese and kombucha. I'm feeling inspired by some of the answers, though - maybe I'll actually attempt some cooking more elaborate than boiling an egg this week.

A pound of ground beef, sauteed with onions and cauliflower and lots of spices. Oh yeah, and I melted pastured butter into the mix before eating! Quick, fatty, sufficient protein, and delicious.

Seared beef heart, thinly sliced, over red, green, and yellow peppers sauteed in butter and garlic! A little more chewy than I expected even though it was med. rare (I ate a bloody heart! heh)

Flank steak in a Vietnamese-style marinade, cooked to mid rare, sliced over a salad of green and red lettuces, cucumber, red bell pepper, green onion, fermented ginger carrots (a la Nourishing Traditions), and cilantro in a gingery-garlicky-limey-fish-saucey EVOO dressing.

I made fried cow tonight. No, really, vaca frita, a Cuban dish. I get pre-cooked shredded beef from US Wellness for this and ropa vieja. I have done the "boil an expensive flank steak for two hours, cool, then shred" exactly once. What a pain in the ass.

Marinate 1lb shredded beef overnight in 1/4c each lemon & lime juice with plenty of garlic and whatever other spices you want -- I add 1tsp red dried chili pepper, a little cumin & coriander -- then squeeze the juice out of it and pan-fry on low/medium heat in coconut oil with thin-sliced onions til desired crispinesss achieved. NOM. I ate it with a simple green salad.

The US pre-cooked/shredded beef has plenty of fat in it, too, much more than the average flank stead would have.

Bachelor Sausage Stir-Fry (I eat this way too much)!

  • Good Quality Sausage (I get grass-fed beef or pastured pork with no fillers)
  • Bacon
  • Onion
  • Mushroom
  • +Random Ingredient from fridge (peppers, leftovers, etc)

Chop it all up, fry in ghee, serve covered in a low-sugar tomato sauce! Very quick and easy to make and delicious!

I ran out of the good stuff! 3 heads of romaine, dressing of tomato paste, coconut oil, chili and garlic. I'll be eating veggie until my co-op delivery comes wednesday -_-

Dinner:

Lamb shank - wrapped tightly in tin foil and roasted slowly in the oven with black pepper and herbs.

Cassava root - boilded and mashed with butter.

Mixed vegetables cooked in a saucepan with a little olive oil, water, mixed herbs and spices:

  • Carrot.
  • Onion.
  • Mushroon.
  • Tomato.
  • Black kale.
  • Seaweed.
  • Chinese water chestnuts.
  • Bamboo shoots.

Also mango chutney and tamari added as condiments.

Late desert:

Fresh blueberries and blackberries plus almonds and dried figs.

Today was an amazing Zucchini Lasagna. modified from allrecipes.com

  • 2 large zucchini
  • 1 tablespoon salt
  • 2 pound ground beef
  • 1 1/2 teaspoons ground black pepper
  • 1 small green bell pepper, diced
  • 1 onion, diced
  • 1 container of organic bertoli basil garlic spaghetti sauce
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh oregano
  • 1 egg
  • 1 (15 ounce) container low-fat ricotta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 pound fresh mushrooms, sliced
  • 8 ounces shredded mozzarella cheese
  • 4 ounces grated Parmesan cheese
