I'm very curious, If you are one of the people that became more intolerant or intolerant to a food ( such as dairy) after going paleo, would introducing it slowly make you more tolerant to it?
For example, All my life I've been what I used to call "Partly lactose intolerant". As in, a Glass of milk or an icecream will make my stomach hurt and give me flatulence ( ew ) , but with any cheeses (except processed) and yogurt I had little to no problem.
Now after eating paleo for about 4 months, If I even eat a small bite of ANY dairy, so even goats milk feta cheese, I start bloating and almost certainly my colon is stuffed >.>
Recently I bought inner health plus because a relative of mine reckons my gut flora is a bit off.
Would introducing the food back very slowly make you more tolerant to it?
I had the lactose thing all my life--I thought. A month or 2 after I started making/drinking water kefir I accidentally discovered I could safely eat yogurt. At Christmas I tested with ice cream and that's now fine too.
Unfortunately, the water kefir hasn't done a thing for me re: wheat. Even a trace can do me in so I am pretty sure that stuff is gone forever.
I'd bet that if I stopped drinking the water kefir I'd lose the get-out-of-jail card for the yogurt, so I don't plan to stop because I now make extra-fat yogurt and eat some every day. :-))
Re: your question, I would imagine the answer is yes and no. The gradual re-introduction might work if it's a matter of gently convincing your gut flora to accept it. But if you have a real problem with something and your immune system is armed against it, then no dice. From what I've read, I'm very lucky my system is allowing me to drink coffee--that may also be thanks to the water kefir. I guess coffee may trigger a "gluten" cross-reaction in some people as discussed in this thread and (I believe) an article by Chris Kresser on his site. I couldn't find the latter in a quick search.
If you have a problem with Lactose, its an enzyme issue, you do not make enough Lactase at one time in order to process the Lactose before it gets too far in your system. You can test this, by getting some Lactase over the counter supplements, taking them, then consuming some Skim Milk and see what happens. If you do not have any problems then it was the lack of enzymes causing issues.
Are there ways to increase your bodies ability to create more enzymes? I'm not 100% sure, however, I have heard of lactose iffy people drinking RAW milk in small small doses and gradually building up, without problem. I don't know how well that works personally.
There are other ways to be 'intolerant' like allergies. If I eat an apple my lips tingle, my throat gets soreish, Ive gotten hives. Somewhere along the way, I became allergic to them. This probably happened at some point when I was eating SAD. If the gut lining gets damaged some things can enter your blood stream that should not get in there, specifically, and this is important - Proteins. When a whole proten, say a piece of 10 Aminos enter the body, the immune system mounts an attack. This is not really something to be messed with as a person can have problems up to and including death during a food-allergy attack.

I've always had that lactose thing too, but it's no worse or better for me now. On the other hand, I'm either more in tune with my body or else I've gotten worse with wheat. I cannot imagine ever trying to bring it back into my diet in any way. Just a little bit of it now makes me jumpy/queasy. Not good.
I suppose you can always simply just try the slow re-introduction and see if you can tolerate it and like it. We're all self-experimenting anyway.
