I bet this has been asked before, but I couldn't find anything.
Okay, so I really fell off the Paleo wagon, REALLY BAD for a while, and now I am becoming insulin resistant again. I get hungry twice at night time, for example, even when I have a nice big, filling, evening meal.
So I'm doing strict Paleo again. I know I will get better again, now that I'm back on track.
The (not serious, but very painful) gallbladder attack I had Wednesday night was enough to scare the boyfriend, so he promised he will stop buying me gluten, flour, junk. I would wake up in the morning to find a cupcake by my nightstand, for example :-O It's no one's fault but my own anyway, no one shoved the food down my throat. But little by little, I was eating bread, pasta, cupcakes, hamburger buns, pizza...
To help me deal with fake hunger at night, I would like a fat bomb... I know people eat coconut oil when they get that fake hunger, but I can't stand it straight.
I'm thinking of something I can keep in the fridge.
No dairy, no fruit, please. Probably no nuts either... but I might reconsider. The almond butter, coconut oil, and cocoa truffles I used to make were pretty decent.

Sometimes I end the day with a cup of tea with coconut oil or grass-fed butter (or a combination of the two). I do the same thing in the morning with coffee.
I made coconut bark and my husband devoured it. Got the idea off another thread. It did have fruit in it but you could omit that along with the maple syrup. I eyeballed all the ratios, so you'll have to experiment.
I melted coconut oil and coconut butter (Artisana brand; bought it at Whole Foods) in a sauce pain. Added shredded coconut, maple syrup and dried cranberries. Poured into a 9x9 pan--the level was about 1/2" thick. I put it in the fridge to harden, then cut it into rough pieces.
ETA: How about guacamole on celery? At its most basic, avocado+onion+salt+lime. Obviously, cilantro is traditional, but I also use flat parsley if that's all I have in the fridge. I also found that when I was first eating paleo and losing a lot of weight, I could have that "fat bomb" with dinner and not as a snack, and I'd be great. Lots of guacamole on grilled meat.
Good for you for staying away from nuts. They're wonderful in small doses, but the omega-6 level is too high for nightly fat bombs!
Yikes ... no dairy, no nuts, and no coconut oil? Presuming straight lard is out of the question, that kind of leaves things like bacon, pemmican and hard- or soft-boiled eggs. If you could tolerate the nuts, Nora Gedgaudas' nut ball snackers seem like an option.

My favorite fat bomb is Bulletproof Coffee. The guy who made the recipe normally includes grass-fed butter, but you can use egg yolks instead.
blend the following:
10-12 ounces of coffee
2-3 egg yolks
2tbs of MCT oil (this is the best brand: http://www.upgradedself.com/Brain-Upgrades/MCT-Oil/flypage.tpl.html)
You can also use coconut oil instead.
