I've got a few fatty products that I use for cooking and ma wondering if they need refrigeration. They are: Coconut cream (package says refrigerate), CaCao Bliss, Ghee, and Red Palm Oil. Which of these needs refrigeration?

Anything that contains PUFAs needs refrigeration. Only the cream and in your list requires it, but things like meat products, dairy, fish oils all need it.

I'd also put the ghee in the fridge if it's from grassfed cows, as it does have some n3's.

Do you then refrigerate your olive oil? 10% PUFA. Ghee is actually closer to 4% PUFAs, and yet you want to store that cold? I don't think PUFA content dictates where fats are stored. – Matt Jan 22 2012 at 15:41
Ghee was used in India because it lasts months on the counter in their heat. Although they use it in most of their cooking, so it doesn't last months on their counter. :) – James Jan 22 2012 at 23:58

yes refrigerate olive oil - heat and light cause rancidity and can oxidize it! – Lady_Arwen Jun 11 at 17:54

The cream, you should pay attention to the label. The rest do not need it (and the CaCao Bliss recommends against refrigeration).

In the case of cream, it will become soft and mushy due to coconut's melting point.I'm guessing refrigeration is just to prevent that despite nothing being wrong with softer coconut cream. Hell, it's way easier to eat than the rock hard straight-from-the-fridge. – Huray Jan 22 2012 at 8:39
