Particularly, I am looking for bison

omega 3/omega 6 raw numbers (not just the ratio) I am looking for mgs of omega 3 and omega 6

and any other differences in nutrition (minerals, CLA's)

if you guys have any links or references that you use to check this stuff, please post that.

PUFA is very low (fractions of a gm) for bison and beef regardless. It's not an efficient source of Omega 3's. It's the balance of O6/O3 that is desirable in Grass Fed meat, it's less biased toward O6.

From the USDA NAL Database:

  • Bison, Grassfed, Ground, Raw 400gm: Omega 3: 0.2gm, Omega 6: 1gm
  • Bison, Ground, Raw 400gm: Omega 3: 0.3, Omega 6: 2.3

Total PUFA content is 4% of fat, so omega 3 is ballpark 0.5-0.66% of total fat. Grass-fed vs grain-fed there's actually not a huge difference. – Matt Feb 1 2012 at 15:48
