Hello!

Just purchased calf liver and eating it at the moment. I've tried it another time and couldn't finish it. This one tastes much better and I could easily include this weekly in my diet.

Why I want it in my diet is for my skin problems (acne), a good source of natural Vitamin A.

question is then - how much of it should I eat weekly and how often?

I make pâté about once a week from various animals livers (usually grab ~1lb of something pastured at the weekend farmer's market): cow, lamb, goat, pig, chicken, duck, etc. I then enjoy the pâté throughout the week, as a side, topping, or main piece in meals.

Pâté is a delicious way to enjoy liver - especially if you are one that really can't stomach the natural flavor of liver.

Also, consider varying the type of liver you get - cow liver is very potent compared to lamb or duck.

Weekly is a good start....I was eating about a pound a week myself (sometimes in one sitting). Right now I got a bunch of liverwurst soooo its a bit different. Going through about a pound of it a week is 30% meat 30% liver, %20 heart, and %20 kidney....or some such breakdown. Taste fantastic cold or heated with a couple of eggs over em.

Unless you suspect you have a true deficiency, I'd let your appetite decide.

When I buy a new package of liver I cook the whole thing. I eat a full portion, 6-8 ounces, and then I portion 2-3 oz pieces and freeze them separately. Any time I get the urge, which for me is about once a week, I grab a piece out of the freezer and add it to my meal. When it's all gone I buy another package and repeat.

To start out I'd suggest once a week or even every two weeks until you are used to it. Once a week isn't too much in my opinion, but I usually eat it a bit less often than that.

I think we need to keep trying things we didn't like previously because our taste changes as we age. Maybe at this point your body is craving it.

i have been eating about a pound a week for the past 8 months up until 2 weeks ago. i have cut back to half as much just in case i am overdoing the Vitamin A.

I follow a similar routine as Nance. I make a pound at a time and divide it into 4 servings, eat one the first night and freezing the others. I generally eat about 4 ounces once every 3-5 days.
