I'm generally trying to stick to only monosaccharides as my carb sources and I'm curious about what type of sugars are in raw unsweetened coconut, coconut butter and coconut flakes/flour. I searched around on the net and looked on http://ndb.nal.usda.gov/ and nutritiondata.com and all the listings just stated carbs and fiber and not what certain type of saccharides the net carbs were.

If anyone could shed some light on the matter I'd greatly appreciate it.

Don't know myself, probably a good amount of amylose/amylopectin starch. Curious what you're interesting in monosaccharides for? – Matt Feb 5 2012 at 3:40

100g 'coconut flake' contains: 1.4g polysaccharides, non-cellulosic, water-soluble

I did a google search for 'chemical composition of coconut' It turns up a nice .pdf file, with 21 pages of more than you could possibly ever need to know about coconut. :D It thinks there is fructose, sucrose, and glucose in the coconut; and also lists some sugar alcohols (mannitol, sorbitol, inositol). Then I had to go educate myself on saccharides.
