Hi folks, been paleo for 12 weeks now - strayed into PaNu for a short bit, but an getting back to core Paleo. One of the things I have struggled with is getting enough calories, and have been using lots of coconut oil and coconut milk in my diet. I searched and know that in general coconut oil is not what you might call an inflammatory agent. Here is the question though - I am slightly allergic to coconut (came up positive in an allergy test a few years ago, just one item in a panel I had done), and I definitely get 'thick in the throat' when I eat lots of it (mucosal production). So I am wondering, for someone who is slightly allergic to it, would it tend to be more inflammatory, and I should avoid it? Thanks!
Edit: Thought I might add - my paleo experience (aside from some fatigue) has been awesome. I was already fit when I started, at 190 lbs and 6'2" and pretty muscular - but still found room to lose over 5.5" off of my waist, and seem to have put on an equivalent mass of muscle to make up for the fat I have lost - still between 185-190 (depends on if I have fasted for a few hours or not - I seem to drop 2-3 lbs just by missing a meal). So I am just trying to fine tune things to make my diet more sustainable for me in the long term. I am actually thinking of adding potatoes back in to try and up the calories a bit...
