Instead of doing the typical dinner out on Valentine's Day, I'll be making dinner at home for my husband and me.
What are your ideas for a romantic dinner to celebrate a special day? Appetizers, main course, dessert, etc? All paleo of course.

This is what I'm planning for Valentine's dinner for my husband and me. Starting with a salad of mesclun lettuces with sliced mini sweet peppers, black berries, chopped raw almonds and a dressing of fresh squeezed orange juice and EVOO. Rare steak with caramelized onions. And sauteed kale with garlic confit and shallots for me (husband won't touch) and a baked sweet potato for him. For dessert a parfait of raspberries, layer of whipped cream, another layer of raspberries with melted very dark chocolate poured on top then put in the freezer for about 15 minutes so the chocolate forms a hard shell. Oh and a very nice bottle of Cabernet. |

I can tell you what not to make: heart-shaped meatloaf. I thought it would be cute, but in reality it looked pretty gross. |

Based on past experience, I'd stay away from anything too heavy. I don't know if this helps, but here's what I'm planning on making: scallop ceviche (make-ahead and no-cook!) carnitas in lettuce cups (slow-cooked, so very little effort + max taste) with homemade pico de gallo (make ahead) and assorted garnish chocolate-covered strawberries Don't stress out about your meal, or it won't make your evening very romantic. (I've done complicated, and it's not so great for the atmosphere if I'm anxious about getting everything done on time and with no mistakes.) |

A nice fresh fruit salad made with your husband's favorite fruits would make a nice dessert. |

My husband is going to do some cedar planked salmon on the BBQ. I was going to make a side of artichokes with homemade mayo, and then a tart with the crust from here: http://themangoduck.blogspot.com/2011/06/zucchini-and-sundried-tomato-tart.html and probably mushrooms, goat cheese & proscuito for the filling. I'm currently on the search for a heart shaped tart pan. ;-) |

I made these will all honey, and skipped the extra salt (with salted butter) and the chocolate chips. They were great. http://naturallyconfusedmom.com/2012/01/02/delectable-coconut-flour-brownies/ |

Don't have a partner myself BUT if I did my menu would look something like this: Appetizer - Prosciutto wrapped melon Side - arugula salad with shaved fennel, pecorino, green olives, and almonds Main - The aptly named "Sweetheart Scallops" from Everyday Paleo [http://everydaypaleo.com/2011/02/08/sweetheart-scallops/] Dessert - Fresh berries (cherries, raspberries, strawberries) with dark chocolate dipping sauce Champagne or Sparkling Water to accompany |
