I avoid egg whites because of an autoimmune condition, but I can eat the yolks. I've tried to make pancakes and waffles with extra egg yolks, but for some reason, the yolks don't bind the coconut flour well (I can't use almond flour). Any suggestions for how to get around this? Curious if anyone else has tried--thanks!

I Found this For a replacement for just the egg white, mix 1 tbsp plain agar powder (available from health food stores/Chinese stores etc) with 1 tbsp water. Whip together, chill it and then whip it again. |

Avocado (2 tbsp mashed per egg) apparently works as an egg (and/or butter) replacement, though I'm not sure how it functions as a binder. I've baked with avocado, and it works well, but I haven't tried it as an egg replacement. Mashed banana, applesauce, and pureed prunes are also common vegan egg replacements. Chia seeds or flax seeds mixed with water. Gelatin also apparently works. |

Are you able to eat flax? This website claims you can substitute flax meal and water for eggs. (Not endorsing the flax they want to sell you, btw; there's a good chance you can find it cheaper somewhere else!) ETA: I know some people don't include flax in their Paleo, but others do. So don't know if this would be an option for you. |

Canned pumpkin, if you can eat that (or fresh carrot, pumpkin, or other squash). I can imagine that extra yolks wouldn't help binding the way that egg whites do. Vegans use apple sauce to bind cake and brownie recipes - maybe try a bit of that too? |

Xanthan (aka zanthum) gum is good for holding things together. Can you use some quinoa flour with the coconut flour, or are you on no-grains? Coconut flour is a bit of a challenge, alone. Also, the more finely ground the coconut flour is, the more easily it sticks together. Guar gum can be used for some things, too. Anyone tried making French toast with just egg yolks? I wonder how it would be. Also, I'm curious how making scrambled eggs with just egg yolks would be. I used to mix 4 eggs scrambled with vegetables like kale, sliced carrots and scallions and just microwave them together. I've stayed away from eggs for more than a year now. Having seen a Youtube video showing how to separate the yolk from the egg whites so cleanly, I'm tempted to give this a try with just the yolks. |
