Bought some fresh spinach and will saute the leaves. What can I do with the stalks though? Is there nutrition there? I was thinking of maybe a spinach stalk cole slaw?

Don't separate them, saute all of it. Or if you must, use the stalks in a smoothie. |

I freeze them and put them in a bone stock along with other stalks, and onion and garlic leftovers. |

Yep, use it to juice, or put in a smoothie. If you have a powerful blender, it will just blend right in, and you'll get tons of benefits from it. I juice all of the leftover bits of the produce from the day before (broccoli stalks, apple cores, carrot ends, kale/spinach/chard stems, etc.), and it makes a nutritious and surprisingly tasty way to start my morning. |

I always just chop up the stalks fine and cook them with the leaves. It never occurred to me not to. |

Use everything! Cut off dirty parts. Julienne. In a pan, add thinly sliced shallots and garlic, and carrot shavings. Butter. Touch of salt. Sweat until it smells delicious. Throw in spinach stalks. Saute until glistening. Add a touch of cream to make it...creamy. Eat. |
