Bought some fresh spinach and will saute the leaves. What can I do with the stalks though? Is there nutrition there? I was thinking of maybe a spinach stalk cole slaw?

"... Absolutely nothing... Say it again, y'all..." Actually I have no idea, but that song is going to be stuck in my head now. – A at Grain Free Diet Feb 15 2012 at 6:08
do you have a guinea pig? A hamster? a rabbit? – gydle Feb 15 2012 at 14:33
Used to have two Guinea Pigs - would have made a great treat for them! – balor123 Feb 15 2012 at 19:46

Don't separate them, saute all of it. Or if you must, use the stalks in a smoothie.

hmm never considered it. Is that commonly done? – balor123 Feb 15 2012 at 6:07

i trim about an inch off them, then sautee the rest of the leaf/stem. fine. – Renee Feb 15 2012 at 12:33
I saute mine as well, and they taste just fine, texture-wise too. – Laina Feb 15 2012 at 15:39

I freeze them and put them in a bone stock along with other stalks, and onion and garlic leftovers.

Yep, use it to juice, or put in a smoothie. If you have a powerful blender, it will just blend right in, and you'll get tons of benefits from it. I juice all of the leftover bits of the produce from the day before (broccoli stalks, apple cores, carrot ends, kale/spinach/chard stems, etc.), and it makes a nutritious and surprisingly tasty way to start my morning.

This must be a joke. – Wisper Feb 15 2012 at 8:29
No joke. Don't knock it till you've tried it. If you put in even one apple core or carrot, it's got plenty of sweetness, and it's a great way to get a boatload of nutrition in the morning, especially for those of us who don't like to eat for the first few hours after waking. – HA Feb 15 2012 at 15:57

I always just chop up the stalks fine and cook them with the leaves. It never occurred to me not to.

Use everything! Cut off dirty parts. Julienne.

In a pan, add thinly sliced shallots and garlic, and carrot shavings. Butter. Touch of salt. Sweat until it smells delicious. Throw in spinach stalks. Saute until glistening. Add a touch of cream to make it...creamy.

Eat.
