I've read that when bones have given up all their nutrients they go soft. I tried simmering some cow bones, with vinegar, for over two weeks (perpetual broth style), but they're still not soft. Should I just keep simmering them forever?

your kitchen must stink as hell, just buy some powdered gelatine ... lol – Paul Feb 20 2012 at 14:58
Yes it was a bit stinky, which is problematic since our kitchen is also our living room, study and wardrobe :) – Coja Feb 20 2012 at 15:19

What kind of bones are they? They're not like marrow bones right? Thigh marrow bones I don't think ever go soft. – Namby Pamby Feb 20 2012 at 15:39
No idea what kind of bones they are, so it's possible – Coja Feb 22 2012 at 13:54

I'm surprised that they're still hard after 2 weeks! Are you removing the broth and adding new water? If not, you may just be reaching a chemical equilibrium with the nutrients in the broth and the bone (I don't know that this has ever been studied!)

If you've been replacing the water then I'm really surprised! Those are some crazy bones you have! lol!

Here's a link about making bone broth for 12 days (not a paleo site): http://www.traditional-foods.com/bone-broth/

I haven't changed the water for over a week (had to postpone my initiation of a strict paleo diet) so I guess that explains it. Cheers for the link. – Coja Feb 20 2012 at 15:17
