Bought some raw unroasted unsalted nuts in the supermarket today. I think Almonds, pecans, pistachios (in the shell), and already have some Brazil nuts and roasted/salted (but no oil) macadamia nuts. Do I need to soak them overnight? Should I just throw them in the toaster oven for 15min at a low temp? If so, then should I toss them in coconut or olive oil or just plain? Or maybe should I just eat them the way they are?

toss them with a little oil, and add seasoning of your choice. One idea is to go just with salt. Another is to dice up a little rosemary and add a pinch of cayenne with your salt (our household fave). But there are a million choices. Alternately, you could throw them in a food processor with some dried fruit, and presto-homemade Lara bars! |

Check out the Weston Price Foundation's website for instructions on soaking nuts. Don't soak the almonds though, because they are not truly raw unless you live in California and bought them directly from the farmer. Soaking almonds that aren't truly raw will result in soft, spongy almonds. Yuck. |
