So I had some dairy the day before yesterday. It wasn't much, but it affected me severely.

I had two tablespoons of organic sour cream, a tablespoon of organic cream cheese, and about an ounce of commercial colby cheese.

Keep in mind I usually eat about 2 tablespoons of kerrygold a day without any issue... first tablespoon is to fry my eggs, second is throughout the course of the day on veggies and such.

Yesterday was absolutely miserable. Slow, painful evacuation (not constipation, more like lava toothpaste), and 4 occurrences (I'm normally a once-a-day kinda guy). I ended up stopping at breakfast and fasting all day until it was gone (I ate this morning and am OK).

Now, considering these were all "soft cheeses" or "sour cream", and I usually don't have any issue with goatsmilk soft cheeses, hard cow cheeses (asiago, aged cheddar, manchego), or butter - could this mean my issues are not casein, but lactose?

Welcome to the wonderful world of lactose intolerance.

Get to know your limits, and don't cross them. Ever. It's never worth it.

I can use infinite ghee, liberal butter (sticks of it, even), I won't die if I eat some sprinkled Parmesan, but creamy cheese -- likely to have a lot of lactose -- will kill me - almost immediate symptoms. Dairy, even in small amounts beyond just ghee, two days in a row will also effect me badly.

Good luck!

EDIT: as you noted, there are better options if you are really craving cheese. Goat's milk cheese is probably the best option: low lactose, high lactase (compared to cow's milk).

Perfect - the farmer's market booth where I get my eggs sells raw goats milk, raw goats milk butter, and cheese. Time to put this theory to the ultimate test. – Joshua Feb 21 2012 at 16:28
