Just wanted to know what you all thought of my meal today.

Breakfast (for IF):

  • Heart of Palm salad w/veggies and homemade olive oil and mac nut oil mayo 1/4 bar of chocolate covered in almond butter and palm fruit oil mix

Lunch:

  • Large takeout salad w/iceburg, green peppers, tomatoes, red onions, olives, and 5 chicken tenders (paid for 2 extra) topped with homemade ranch dressing
  • 1 dried fig

Snack:

  • 1/2 cup mixed fresh fruit
  • 2 Brazil nuts

Dinner:

  • Small salad w/Spring Mix, Kale, avocado, cucumber, celery, and roasted broccoli topped w/homemade ranch
  • Small portion of Kim Chi
  • 1 piece non-dairy zucchini lasagna made w/org spag sauce and grass fed ground sirloin
  • 1/2 cup mashed yams (w/coconut cream)
  • 1/2 cup SoDelicious low glycemic butter pecan ice cream drizzled w/coco milk, coco kefir, and hemp seeds
  • 2 GF animal crackers

Things I don't like (which may or may not agree with):

  • Low in fat, mostly just oil on your greens I see.
  • Low in protein. I'm not saying eat a 1 pound of meat per day, but a few chicken tenders and an ounce or two of ground beef seems a bit low.
  • Snacks and snacky foods. Just eat a more substantial meal and avoid sugary processed foods.

Though, I don't know what your nutritional goals are, what your calorie needs are, etc... I'm fine with low-ish calories, more moderate levels of protein, and higher carborhydrates, but this all seems too low in calories, fat, and protein and a bit high in carbohydrate. Unless you're doing one of the new-kid-on-the-block high-carb paleo diets... In the end, if it works for you, who cares what we all think.

Very few of the calories came from the junk food so it didn't bother me that much. What other sources of fat should I consider adding? Not a big fan of bacon. – balor123 Feb 23 2012 at 18:19
Well, I only assumed. How much are you cooking with? I'm not one to suggest downing pounds of bacon at a time (not for health reasons per se, just variety's sake!) Coconut, olive, butter, animal are my core fats and I get most of each everyday. I've added in red palm oil recently for additional variety. – Matt Feb 23 2012 at 18:56
I tried Red Palm Oil - ick. I cooked the lasagna in coco oil. How do you eat a salad w/o dressing? I used to eat just with olive oil but still processed. And your other veggies? Looking for new ideas to improve my diet of course :) – balor123 Feb 25 2012 at 2:27
I actually really dig red palm oil, though I can see (or rather taste) why folks don't dig it. I'm big fan of cruciferous vegetables, as well as most root vege as well. – Matt Feb 25 2012 at 5:19

I think that it looks fine, depending on your goals and how far down the Paleo rabbit hole you would like to venture. Your menu looks much, much better than the food that most people consume. For me, this list still has too much processed food in it. Chocolate, animal crackers and ice cream would not be regular staples within my diet. It also appears that you are using a lot of sauces. Even if homemade (ie. mayonnaise and ranch dressing) they are probably less than ideal. I am far from achieving paleo sainthood, believe me, but to contrast, yesterday I ate nothing from a box or a jar - with the exception of a little coconut oil. I ate a pound of good beef, some eggs, coconut oil, a sweet potato, a lot of vegetables. I feel like a million bucks today.

Also, in parenthesis after Breakfast you list "IF". Do you mean intermittent fasting? If so, I assume that you mean that you broke your fast with this meal and that you do not consider it to be fasting after you consumed this meal.

Yes I did. The mayo have a little protein from the egg in the mayo but it's pretty diluted. The heart of palm has a little protein and carb but also not much. The chocolate and nut butter are also low in protein and carbs. – balor123 Feb 23 2012 at 15:16

Did you forget to list some protein that you may have eaten beyond the chicken tenders?

The ground sirloin in the lasagna. A total of 1gb was added to it so I may have eaten .1 - 2. lbs. Think I need to add more protein? – balor123 Feb 23 2012 at 6:44
