My biggest surprise was tougher skin. I attribute this to a much larger percentage of saturated fat in my diet and a significant decrease in polyunsaturated fats. I used to get scrapes and cuts rather easily and the skin on my knuckles would start cracking every winter. The knuckles were by far the most noticeable.
It took about two years of eating Paleo, but it was very gratifying to go an entire winter with no painful cracked knuckles. Subsequently, I would occasionally bang a shin or scrape myself and be surprised to notice no bleeding.
