Salad for breakfast?

So I am struggling to find a consistent breakfast. I used to eat eggs every morning and that worked for a few months. Then eggs stopped sitting well in my stomach and giving me some gas. I switched to fasting in the morning but that made lunch a pain. I have tried almond butter and celery but that is now going tiresome and I eat way too much. I work as an EMT so eating salads and veggies has become tougher because it is really a sandwich-based lunch profession. Even if you skip the burgers, you can only eat "healthy" by stopping at Subway and getting a foot long. If you order a salad, you get 4 bites in and it's time to do a call (where as you can eat a sandwich while driving or riding shotgun). I want to try to get salads into my diet again because I did great having them as a regular lunch at my last job. Tons of fresh veggies, olive oil, and some grass fed meat, what's not the love? Has anyone tried this out as a breakfast meal? Could the veggies not sit well in your stomach? How do you prepare the meat for the salad? Do you use different meats? I think I am going to try to change up my breakfast every now and then to avoid burnout but I'm wondering if anyone has experience in this.
