I started eating my version of paleo about 2 months ago -- it's evolving (ha! see what I did there?) all the time, but for now:
I mostly eat meat (pastured, local, organic as much as possible), eggs (pastured, local), and vegetables of all kinds except potatoes. Some dairy in the form of good (milk + cultures only) yogurt a couple of times a week, half-and-half in my coffee daily, and small amounts of cheese as a condiment nearly daily. 0-2 servings of fruit (usually apples or berries) a day. 1/4 cup or less of nuts (usually walnuts, sometimes almonds or cashews) a day. Added fats are butter, coconut oil, olive oil & bacon fat. No added sweeteners (including artificial sweeteners -- a huge change for someone who used to live off Diet Pepsi), except the very rare dollop of honey. Only grain is the occasional small amounts of rice. I have no idea what my macronutrient percentages are. I'm sure it's much lower carb than my old grain-heavy, sweet-heavy diet. When I eat like this I feel really good physically and emotionally, and I've been slowly & steadily losing body fat.
I also drink wine, hard cider and/or liquor a few times a week -- beer, which I used to love, now makes me so bloated I can't stand it. In and of itself, I think this is fine, but sadly sometimes drinking leads to, "Hmm, how's about some of those baby Twix bars from Halloween?" which leads to "Eh, I already ate the Twix bars, let's go to town and make a big mug of hot cocoa!" and so on. These slippages are getting fewer and farther between because I feel like crap (physically and emotionally) the next day.
I think I'm probably closest to Sisson's Primal diet, but for some reason prefer the moniker paleo.
