I latched onto WAPF back around 1999, ditching vegetable oils and embracing coconut oil and traditional fermented foods. But, I was still a largely vegetarian carb junkie, eating loads of "healthy" whole grains and beans, and continuing to get fatter. I started shifting toward paleo in Oct 2003 by eating more meat and cutting out most (but not all) grains, beans, refined sugars, and tubers.
About five years ago, I ditched the sprouted grain bread and oatmeal and have been largely paleo ever since. I go through phases when I'm more and less strict about certain foods, like cheese and dried beans, which are comfort foods but also problematic. Too much cheese gives me headaches, and starch dysregulates my appetite. I have the discipline to not eat types of food, but I have zero ability to not eat when I'm hungry. Every time I start eating any kind of starchy food several times per week, I start gaining weight. But, for me, maintaining an even keel does not require very low carb. The few times I tried VLC, I could not get past the brain splitting headaches.
Right now, coffee and the local organic heavy cream are my main neolithic indulgences.
