I tend to eat as often as I'm hungry, and as much as is needed to not be hungry anymore. Sometimes that's many times a day, sometimes it's just once or twice in a day.

Your diet looks fine, unless you are ODing on the nuts. I know you didn't ask, but unless you have an active job, I would add more moving slowly (e.g.: walking every day for 45 min-1 hour) to your daily activities. Ditto the sprints.
