I don't know how to get enough vitamin E without nuts...I don't do veggie oils except coconut, and I feel like I would have to eat a bag of spinach a day..

Red Palm oil is high in Vitamin E. Papaya provides 11 % of daily Vitamin E. Paprika is another source. Pickles green olives is a source of Vitamin E which can be used with salads

A mega-dose of a non water soluble vitamin would work great since you can store it in fat - like vitamin A. However, vit C and zinc are water soluble so you'd just pee out the excess and be deficient again in a few days without a regular dose. (more)
