I am travelling 8 hours tomorrow with no time to stop anywhere. Does anyone have good ideas for paleo friendly snacks and meals that I can eat on the way? (Besides the usual raw veggies, fruit, hard boiled eggs, beef jerky etc).

I like the Snack Sticks at US Wellness meats. Can you do coconut? If so, one of my goto snacks is Coconut Chips from Tropical Traditions. I sometimes mix it with a little beef jerky for a nut-less trail mix.

I would go with a banana. The protein and fat from the egg won't help/digest fast enough, and the sweet potato takes a while to digest as well. Have a banana 30 min before and you should be fine

Peanut butter is NOT Paleo! Peanuts are legumes, not nuts. Choose almond or macadamia or coconut butter, much better options. Other high-fat snacks: olives, bacon, avocados, canned sardines.
