You might be low on stomach acid. Have you tried adding betaine and digestive enzyme supplements at the beginning of your meals? And are you chewing really, really well?

Yeah, I have trouble with almonds and almond flour. My mother has the same issues with coconut flour. I would suggest that rice based foods are the gentlest for transitioning off gluten-based baked goods. Nut milks have always worked OK for me... (more)
