I have had that stomach problem as well. Your right about the HCl being too low. The reasons for it being low generally indicate a damaged stomach lining, usually precipitated by allergies. Animal protein will increase HCl production... (more)

Gluten sensitivity can cause gut inflammation that makes it hard to deal with egg protein. My wife had this as a major problem until we ditched gluten for good. After a few months she was able to eat eggs without any issue. Give it some time... (more)

Processed foods aside, I'm of the opinion that our bodies crave foods that contain the minerals/nutrients it currently needs. Perhaps you are "topped up" on whatever need that the cheese was satisfying.
