Sounds like you're in a high stress situation/high cortisol situation with low sleep/food. Kind of a prescription for fat gain. Eat more fats, reduce carbs a bit, get more sleep (try a few nights to get 8 hours in a row and see how you feel). ... (more)

I don't think it's a fat adaption thing if you've been eating paleo for a couple years. It may relate to bile production. Have you had any blood work done? You may have elevated liver enzymes or bilirubin.
