Finding "triggers": How long does it take?

I am testing dairy and potatoes. How long would you expect a body to take in reacting negatively? I had the dairy yesterday at noon. I'm looking for any problems with swelling or pain in my hands (early stages of osteoarthritis, I'm 43.) Also--are any triggers "accumulative"? One day of dairy = OK but two or more could create the problem?

Did you eliminate them for multiple weeks? If so, reintroduction generally will cause negative results in short order if problematic. Read up on a proper approach to an elimination diet: http://www.precisionnutrition.com/elimination-diet

I heard it's generally a 72 hour mark. Have a little in the morning and then a full serving in the afternoon and track all symptoms for 3 days after. Only test one food at a time
