Long before any books on Paleo diets were published (or at least that I was aware), I thought about nutrition from the standpoint of evolution. I haven't been following any particular paleo diet, but I have celiac disease so have been gluten free for a while now. This also means I prepare most of my own foods, most from natural ingredients, and organic and grass fed when I can find/afford it. I believe that chemicals in our environment are responsible for a great deal of sickness, including autoimmune diseases. I am currently trying to figure out what autoimmune disorder (besides celiac) as my ANA was high in my last bloodwork and I've had other health problems this last year. For these reasons, nutrition has become even more important to me than before. I don't intend to adhere to any strict form of a paleo diet, but am here to learn about which aspects are most important to incorporate into my meal planning.
