Low Carb/VLC former vegetarian (8 years)/vegan (3 years) who now consumes pasture-raised, local grassfed meats, wild caught fish, low carb veggies, coconut, good fats, and nuts. I'm gluten and dairy-free (minus butter) since January 2012.
I would love to raise my own food one day on a little farm. I also spin wool and consider myself a homesteader, albeit one who currently lives in suburbia.I'm also nutrition/health obsessed nerd (like most of you) who has been battling Hashimoto's thyroiditis (hypothyroid) and PCOS for years with a low carb diet. I'm proud of my awesome blood work though despite all my issues. :)
