I'm a doctorate student in Environmental Economics (a National Needs Fellow in Sustainable Agriculture)with a masters degree in ecology and evolutionary biology. I'm also a single mother of twin three-year-olds, a former national competitor in taekwondo, an urban homesteader, and a low oxalate dieter. I have severe chronic health issues related to the oxalate (an antinutrient and toxin) found in most veggies, fruits, nuts, grains, and legumes, so I'm slowly trying to find the right balance between a Paleo lifestyle, a low oxalate diet, and feeding a family on a strict budget. If I hit 90% Paleo I feel like I'm doing well!
