Carbs do not at all make you fat. Being insulin resistant makes you fat.

Plants are sessile. Humans can find their food, so I am not sure your evolutionary argument would be applicable from plants to humans. I know a lot of vegetarians who do just fine. I am not anti-vegetarian because I am paleo.

I don't think cashew cheese will give you as authentic a finished product as something like this sauce recipe will (use nut milk instead of soy obviously) The sweet potato adds the color and texture and nutritional yeast give a very nice cheese... (more)

I think it all comes back to gut health. I'd argue that it's harder to have a healthy gut on a veg*n diet, thus any deleterious effects from gluten consumption are going to be all the more pronounced. Heal the gut, gluten intolerance disappears. (more)
