I want to increase the amount of organ meat I consume and my preference would be to eat liver. However I can't do it without some sort of gravy.... HELP

sounds like you are eating very few carbs. The "stubborn belly" could be from a ton of things -- one of which is too much cortisol build-up. You may want to consider implementing more rest days to help your body heal.
