A better route would be to eat coconut flesh, whole macadamia nuts or avocados to get a bunch of vitamins and minerals along with the fats. Adding refined oils to your diet drives the nutrient density downward.

Please note: Paleo-ified junk food is still junk food. However, if you are going to eat this, dump the "sugar-free" maple syrup. It isn't maple syrup and is worse for you than the real thing.

I think you might be able to try it with sweet potato, coconut flour and eggs - not sure about the ratios, however... If you wanted a lower-carb version you could also try it with some canned/mashed pumpkin instead of the sweet potatoes. (more)
